Total Time: 35 Minutes
Yield: 6 servings (half for non-family style)

Ingredients
  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, diced medium
  • 4 garlic cloves, roughly chopped
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon chipotle chile powder
  • Coarse salt and ground pepper
  • 1 medium zucchini, cut into 1/2-inch dice
  • 3/4 cup (6 ounces) tomato paste

  • 1 can (15.5 ounces) pinto beans, rinsed and drained
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (14.5 ounces) diced tomatoes with green chiles
Directions

In a large pot, heat oil over medium-high. Add onion and garlic; cook, stirring frequently, until onion is translucent and garlic is soft, about 4 minutes.

Add cumin and chile powder, season with salt and pepper, and cook until spices are fragrant, 1 minute.

Add zucchini and tomato paste; cook, stirring frequently, until tomato paste is deep brick red, 3 minutes.

Stir in black beans, pinto beans, and both cans diced tomatoes. Add 2 cups water and bring mixture to a boil.

Reduce to a medium simmer and cook until zucchini is tender and liquid reduces slightly, 20 minutes. Season with salt and pepper.

In The News!
Cosmo Couture

The IIDA Washington Metro City Center is pleased to announce that this year’s Cosmo Couture fundraising event will be held on September 20, 2012 at the Artisphere in Arlington, Virginia. Cosmo Couture fosters a direct collaboration between local Architecture and Interior Design firms and their manufacturing partners in the Washington DC area, to create garments reflecting a given theme. The garments are judged during a runway show and awards are given to design teams in different categories. The beneficiary for this year’s event will be My Sister’s Place. We are honored to have donated over forty thousand dollars to My Sister’s Place in DC over the past two years. Our success has been the direct result of the generosity of all those who have given their continued support to our events.

This year’s design inspiration comes from the enigmatic Red Star painting by Raymond Saunders, which is part of the contemporary collection at the Corcoran Gallery of Art. This artwork combines Saunders’ expressionistically worked surfaces with pop art of the sixties. Its random, yet structured composition includes powerful fields of vibrant color, calligraphy marks, stenciled numbers and a huge red star with an ampersand at its heart. It bridges an urban experience reminiscent of graffiti and an iconic image stripped of its specific political significance, provoking the viewer to decode its meaning. Does the star allude to a political symbol or is it merely a structural shape that provides order to the abstract background?

Red Star, Raymond Saunders

Check out our Blog next week for a follow up of who attended and what was worn on the runway!

Recipe Of The Week!
Fall Salad

Crisp fall air means tailgating time and apples by the bushel. Our fall recipe collection includes the best autumn recipes from chefs all over the world. Prepare for fall "inspired" meals with our recipes for soups, salads, stews, desserts, and of course comfort foods!

Ingredients: Fruit, Vegetables, Nuts
Cook Time: 5 minutes
Level: Easy

Ingrediants

Candied Pecans:
  • 2 tablespoons unsalted butter
  • 2 tablespoons packed light brown sugar
  • 1/2 cup raw pecans
Maple-Balsamic Dressing
  • 1 small shallot, finely diced
  • 1 teaspoon Dijon mustard
  • 2 teaspoons balsamic vinegar
  • 1/4 cup extra-virgin olive oil
  • 2 teaspoons maple syrup
  • Kosher salt and freshly ground black pepper
  • 1 head endive, separated leaves
  • 2 hearts frisee, hand torn
  • 1 large radicchio, torn leaves
  • 1 red pear, sliced
  • 1/4 cup shaved Parmesan

Directions

To make the candied pecans, set a nonstick pan over medium heat. Add the butter and sugar and once it has melted toss in the pecans and continue to toss to coat and cook evenly, about 1 minute. Transfer to a sheet tray lined with waxed paper (use 2 forks to separate pecans) while you prepare the salad.
Make the dressing by combining the chopped shallot, Dijon and balsamic vinegar in a large mixing bowl. Slowly drizzle in the olive oil while you whisk to emulsify. Add the maple syrup and season, to taste, with salt and pepper.
Assemble salad by tossing greens and pear slices in a large mixing bowl with maple-balsamic dressing. Top with shaved Parmesan and candied pecans.

Olivia Millar, Millar + Associates

As Principal and Founder of Millar + Associates LLC Olivia works with commercial, non-profit, education, retail, and government institutions to help them understand the goals for their real estate and space utilizations, and design to the goals outlined by her clients with a particular focus on budget, schedule, functionality, and aesthetics.

When Millar + Associates was founded in January this dramatic room presented the perfect place to launch a new interior architecture firm.  When we began there were 4 people, we are now 7 people and have reached capacity.  The all open environment is perfect for our firm, we are very hands-on and collaborative so we can all pull up to the center table and design then go back to our desks to execute.  We love the location, one block off Dupont Circle, and are still working our way through all the area restaurants.  We were familiar with the Kimball Priority product because we had recently specified it on a 63 seat office project where it worked for both the open office environment and the private office environment.  In our new setting it offered a clean modern contrast to the historic building and provided the functionality we needed with respect to flexibility and storage.  We have specified the Priority line since and continued to be impressed with the product.
