10/26 IFMA

We here at Kimball Office keep rocking and rolling well into the Fall Season. After recovering from NeoCon East in Baltimore, we have already began to tackle more Fall events here in the city. The Fall season is a busy one for events and parties...it doesn't stop there either! The Winter/Christmas events will creep up on us soon, so hold on. For now, check out the IFMA get together that was held, in preparation for the IFMA World Workplace coming up very soon, at our D.C. Showroom at 1130 Connecticut Ave, Suite 1150. Enjoy!

In The News!
IFMA - World Workplace

Kimball Office hosted a quaint get together for IFMA members at their showroom on Wednesday, October 24th. Only one week before World Workplace kicks off, this gave members a chance to meet other chapter members who will be in San Antonio.  In addition to networking, Dave Samec, CFM of the National Gallery of Art kicked off the happy hour by sharing event highlights, activities you can't miss and tips for making the most out of the time spent in San Antonio. Kimball Office will feature more information in our Blog, on World Workplace, which  is held in San Antonio, TX on October 31st, 2012.

Recipe Of The Week!
Roasted Mushrooms with Pumpkin-Chipotle Polenta

Total Time: 30 minutes
Yield: 6 Servings

Ingredients
  • 2 pounds mixed mushroom caps, such as coarsely chopped hen of the woods or wood ears, coarsely chopped shiitakes, thinly sliced porcini, thinly sliced portabellas or criminis
  • About 1/3 cup extra-virgin olive oil
  • 1 head garlic, cloves crushed
  • Small handful sage, chopped or thinly sliced
  • Sea salt and freshly ground black pepper
  • 1 cup cooked pumpkin puree
  • 3 cups chicken stock
  • Freshly grated nutmeg
  • 1 chipotle in adobo, seeded and finely chopped, plus a small spoon of sauce
  • 1 cup quick-cooking polenta
  • 2 tablespoons butter
  • 2 tablespoons honey
  • Toasted pepitas, for garnish
  • Chives, chopped, for garnish
Directions

Preheat the oven to 425 degrees F. Toss the mushrooms with the extra-virgin olive oil, garlic, sage, salt, and pepper, and roast 25 minutes.

Meanwhile, heat the pumpkin puree in a small pot over medium heat with a little chicken stock to thin it out. Season with salt, pepper, and nutmeg.
Bring the remaining stock to a boil in a sauce pot and whisk in the chipotle in adobo, its sauce, and polenta. Keep whisking the polenta until it pulls away from the sides of the pot, then stir in the butter and honey. Combine the pumpkin and polenta and serve in shallow bowls.
Top with roasted mushrooms and garnish with pepitas and chives.
